April 23: Vegan Cooking Class with Mimi Clark
On Saturday, April 23, Compassion Over Killing was thrilled to celebrate the close of another successful VegWeek with a cooking class hosted by Mimi Clark of Veggie Gourmet. Mimi, who has generously hosted several vegan cooking classes at COK’s Takoma Park office in the past, taught her students about “Making Quick and Easy Vegan Meals Monday through Sunday”.
The menu included Baked Pasta with Tofu Ricotta “cheese”, Gardein Chicken Salad, Lentil Stew, and several more delicious, creative, and yet simple, animal-friendly recipes. Students learned all about the latest in vegetarian cooking and products, information for serving up healthy dishes at home, and tips for creating several meals by varying just a few key ingredients. After the lesson, Mimi’s audience got the chance to taste all of her dishes, including some sweet treats- vegan, coconut-crusted marshmallow’s by Sweet and Sara!
All attendees received recipes, coupons, and several free food samples to take home. This class received such interest and positive feedback, COK will most likely host another—so stay tuned! And don’t forget to check out other COK events!
