Going with the vegetable plate

I am glad to see the popularity of "meatless Mondays" taking off ["Oh, meatless Mondays," Food, May 19]. Despite what the meat industry says, just about every reputable health organization recognizes the benefits of reducing meat consumption.
Environmental groups are starting to recognize the terrible costs of meat production -- from wasted resources to pollution of air and water to its contribution to global warming. And with the conditions in factory farms and slaughterhouses coming to light, people are becoming disgusted with the industry, with some choosing less cruelly produced animal foods.
One need not become vegan to make a difference, although that would be nice. Reducing one's meat consumption brings great benefits for one's health, the animals and the environment.
