Thank you for Janelle Gergen's article about the ease of choosing nutritious and delicious animal-free foods ("Going Vegetarian is Easy," March 18). As a longtime vegan, I know that leaving meat off our plates doesn't mean skimping on flavor. Rather, it simply means choosing the cruelty-free versions of our favorite foods - including veggie burgers, soy hot dogs, "chicken" fingers and so much more.

As a growing number of people are opting for healthier and more humane foods, restaurants, dining halls and grocery stores nationwide are starting to stock up on meatless meals to cater to the increasing demand.
