Vegan Diet Catching On

Thanks to The Courant for highlighting the wonderful world of vegan cooking.

It's true that leaving meat, eggs and dairy off our plates has become increasingly popular, and for good reasons. Choosing vegan foods is a simple and effective way each of us can help protect our health, the environment and animals.

Each year in the U.S., more than 10 billion birds, pigs and cows are killed for us to eat. Most of these animals are forced to spend their lives on factory farms, where they are deprived of almost everything natural to them -- even sunlight.

We're thankful that restaurants and grocery stores are stocking up on healthier and more humane foods to meet the growing demand. In addition to cookbooks, you can find countless delicious vegan recipes online through websites and blogs. VegRecipes.org is a great place to start.
