Thank you for your article profiling the delicious cuisine of Ubuntu restaurant and for promoting the fact that vegetarians need not sacrifice flavor when they choose meat-free foods (“Fresh flavors at Ubuntu,” Wednesday). Whether one is looking to avoid the many negative health issues associated with eating animal products or to help the billions of farmed animals needlessly slaughtered each year in the United States, becoming vegetarian has never been easier or more mainstream. And, as Ubunto chefs Jeremy Fox and Deanie Fox ably demonstrate, choosing plant-based foods today is not nearly as intimidating as it once was.
