There are many animal-free eating options

There need to be more articles like Fran Lobiondo's "Meatless Meals" (DJ-2/11), if only to topple the "whole-foods, whole-paycheck" myth.
A lifelong vegetarian and vegan for four years and counting, I have found whole foods an invaluable source of high quality, organic ingredients. These can, as noted in the article, be transformed into nutritious, delicious and ethically defensible meals.
Maybe once people recognize the cost-effectiveness of these animal-free eating options, there will be a mass conversion to cook-it-yourself veganism. (A girl can dream, can't she?) Thanks for helping to get the word out!
