Vegetarian Chili

Re: Nov. 5 article “Hold meat, add Shiner and stir.”

As a chili lover and long-time vegetarian, I appreciated Melissa Mixon’s article on the vegetarian chili cook-off. It may surprise some non-native Texans to know Texas is actually one of the more veg-friendly states.

Major cities such as Austin and Dallas are home to several all-vegetarian restaurants. For some of us, though, eating prepackaged and restaurant products is beyond our means. I know many Texans who choose foods such as beans and rice as an affordable way to help transition to a healthier diet.

Texas has achieved many “firsts.” Perhaps being the most animal-friendly and healthy state can be one of them.
