Teens' Vegetarian Interest Is A Welcome Development

It's wonderful to read that a growing number of today's youth are expressing their compassion for animals by choosing vegetarian foods — and that school cafeterias are catering to this increased demand for meat-free meals ("Eat your veggies," March 12).

The popularity of these options, even among students who eat meat, proves that vegetarian eating doesn't mean skimping on flavor. Rather, it means choosing the cruelty-free versions of our favorite foods.
